Ingredients

  • 1 small orange
  • 2 c. fresh cranberries
  • 1 2/3 c. sugar
  • 1/2 tsp. almond extract
  • 3 eggs
  • 2 c. whipping cream
  • 1/4 c. all-purpose flour
  • 8 oz. egg bread or 8 slices firm-textured white bread

Instructions

  1. Peel off just the rind of the orange using a vegetable peeler, reserving the peel but not the pith.
  2. Peel the remaining pith from the orange and discard.
  3. Section the orange into individual segments.
  4. Reserve the orange segments and peel.
  5. In a mixing bowl, combine cranberries, sugar, almond extract, and orange peel.
  6. In a separate bowl, whisk eggs and whipping cream until well combined.
  7. Add the egg mixture to the fruit mixture and stir gently.
  8. Tear the bread into pieces and add to the mixture, ensuring it is well coated.
  9. Pour the mixture into a greased baking dish.
  10. Bake at 350°F (175°C) for approximately 45 minutes, or until the pudding is set and golden on top.
