Ingredients

  • 1 1/2 cups Wesson oil
  • 2 cups sugar
  • 5 eggs
  • 2 1/4 cups flour
  • 3 cups grated carrots
  • 1 1/2 cups nuts
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt

Instructions

  1. Mix oil, sugar, and eggs together, adding eggs one at a time.
  2. Sift together flour, baking powder, soda, cinnamon, and salt.
  3. Add the sifted dry ingredients to the wet mixture.
  4. Stir in grated carrots and nuts.
  5. Pour batter into a greased tube pan or three 9-inch cake pans.
  6. Bake at 350°F until a toothpick inserted in the center comes out clean.
  7. Allow to cool, then ice with Philadelphia cream cheese icing.
