Cranberry Fruit And Nut Bread

Ingredients

  • 3/4 c. butter or margarine, softened
  • 1 1/2 c. sugar
  • 3 eggs
  • 2 1/2 c. all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 1 1/2 c. sour cream
  • 1 tsp. vanilla extract
  • 3/4 c. chopped cranberries
  • 1/2 c. chopped pecans
  • 1/2 c. golden raisins
  • 1/3 c. chopped dried apricots
  • pecan halves and whole cranberries (for top of loaves)
  • 1 c. sifted powdered sugar (glaze)
  • 1 1/2 to 2 Tbsp. milk (glaze)

Instructions

  1. Cream butter in large mixing bowl; gradually add sugar, beating well.
  2. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder, soda, salt and nutmeg.
  3. Add to creamed mixture alternately with sour cream, beginning and ending with flour mixture.
  4. Mix. Stir in vanilla.
  5. Fold in cranberries, pecans, raisins and apricots.
  6. Pour into two greased and floured loaf pans.
  7. Bake at 350° for 60 minutes.
  8. Cool.
  9. Drizzle the powdered sugar and milk mixture over loaves.
