Ingredients

  • 3 eggs
  • 1 1/2 tsp vanilla
  • 3 tsp baking powder
  • 2 1/4 cups sugar
  • 1 1/2 cups plain flour (unsifted)
  • 1 cup coarsely chopped pecans
  • 2 large cartons Cool Whip
  • 2 medium apples chopped

Instructions

  1. Beat eggs until thick and lemon colored.
  2. Gradually beat in sugar and vanilla.
  3. Fold in flour and baking powder.
  4. Fold in chopped apples and pecans.
  5. Line two 9-inch cake pans with foil and grease them.
  6. Spread batter evenly in the prepared pans.
  7. Bake at 350°F for 30 to 35 minutes.
  8. Remove from pans by lifting the foil and cool.
