Ingredients

  • 1 cup calamondin puree
  • 1 1/2 cups sugar
  • 1 cup chopped walnuts
  • 2 eggs
  • 1/2 cup milk
  • 3 tablespoons oil
  • 1 teaspoon salt
  • 1/4 cup raisins
  • 1/4 teaspoon cloves
  • 1/4 teaspoon ginger
  • 1/4 teaspoon cinnamon
  • 1 1/2 cups flour
  • 3 1/2 teaspoons baking powder

Instructions

  1. Wash about 12 calamondins, cut into halves, seed, and puree in a blender.
  2. Put the calamondin puree in a large bowl and add sugar, chopped walnuts, eggs, milk, oil, salt, raisins, cloves, ginger, and cinnamon.
  3. Mix until well blended with an electric mixer, about 4 minutes.
  4. Add the flour and baking powder all at once and mix only until blended.
  5. Pour the batter into a greased loaf pan.
  6. Bake at 350°F (175°C) for about 75 minutes or until the loaf tests done.
  7. Cool in the pan for 10 to 15 minutes.
  8. Turn out on a cake rack to cool.
