Ingredients

  • 4 medium pears (Bosc, Bartlett, or Anjou)
  • 1 cup sugar
  • 1/4 cup all-purpose flour
  • 1 tablespoon finely shredded orange peel
  • 1 teaspoon ground cinnamon
  • 2 cups cranberries
  • Pastry for double crust pie
  • 1 tablespoon margarine or butter

Instructions

  1. Peel, core, and slice pears (approximately 5 cups).
  2. In a mixing bowl, combine sugar, flour, orange peel, and cinnamon.
  3. Add pears and cranberries to the bowl; toss to coat evenly.
  4. Set aside the prepared fruit mixture.
  5. Line a pie dish with pastry for a double crust pie.
  6. Pour the fruit mixture into the pie crust.
  7. Dot the filling with small pieces of margarine or butter.
  8. Cover with the second crust and seal the edges.
  9. Cut slits in the top crust to vent steam.
  10. Bake in a preheated oven at 375°F (190°C) for about 45-50 minutes, or until golden brown.
  11. Allow to cool slightly before serving.
