Ingredients

  • 1 pkg. Pillsbury cranberry quick bread mix
  • 3/4 cup quick cooking rolled oats
  • 1/2 cup coconut
  • 1/2 cup sweetened dried cranberries
  • 1/2 teaspoon grated orange peel
  • 1/2 cup oil
  • 1 tablespoon water

Instructions

  1. Combine the quick bread mix, oats, coconut, cranberries, and orange peel in a bowl and mix well.
  2. Add oil, water, and eggs to the dry ingredients and mix until combined.
  3. Drop heaping teaspoons of the batter onto an ungreased cookie sheet, spacing them 2 inches apart.
  4. Bake at 350°F (175°C) for 10 to 13 minutes until the bottoms are golden.
