Ingredients

  • 2 cups cranberries
  • 1 1/2 cups cold water
  • 1 cup sugar
  • 1 tablespoon unflavored gelatin
  • 1/2 cup chopped nuts
  • 3/4 cup diced celery
  • lettuce

Instructions

  1. Wash cranberries; add 1 cup cold water and cook until tender.
  2. Add sugar and cook for 5 minutes.
  3. Soften gelatin in 1/2 cup cold water; dissolve in hot cranberries.
  4. Add salt and chill until mixture begins to thicken.
  5. Add chopped nuts and diced celery; mix thoroughly.
  6. Pour mixture into oiled ring mold and chill until firm.
  7. Unmold and place on a large salad plate.
  8. Arrange light lettuce around the salad, place shrimp in the center or serve on a bed of chicory on individual plates and garnish with mayonnaise.
