- Wash cranberries; add 1 cup cold water and cook until tender.
- Add sugar and cook for 5 minutes.
- Soften gelatin in 1/2 cup cold water; dissolve in hot cranberries.
- Add salt and chill until mixture begins to thicken.
- Add chopped nuts and diced celery; mix thoroughly.
- Pour mixture into oiled ring mold and chill until firm.
- Unmold and place on a large salad plate.
- Arrange light lettuce around the salad, place shrimp in the center or serve on a bed of chicory on individual plates and garnish with mayonnaise.
