Ingredients

  • 1 lb. lean stew meat in 1-inch cubes
  • 1/4 cup flour
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. vegetable oil
  • 1 onion, chopped or grated
  • 1 carrot, chopped or grated
  • 1/4 cup finely chopped celery
  • 2 Tbsp. minced parsley
  • pinch of thyme
  • 3 cups water
  • 2 medium potatoes, diced

Instructions

  1. Heat vegetable oil in a heavy skillet or Dutch oven.
  2. Place flour, salt, and pepper in a bag; shake to mix.
  3. Add beef cubes to the bag and shake to coat the meat.
  4. Empty all including extra flour into hot oil and add chopped onion; brown well.
  5. Add minced parsley, chopped carrot, and thyme; cook briefly.
  6. Add water; cover and cook over low heat for 1 1/2 hours, stirring as needed.
  7. Add diced potatoes, carrots, and onions; cook for 30 minutes longer.
  8. Add frozen peas and continue cooking for about 15 minutes.
