Ingredients

  • 1 cup enriched cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 1/4 cup vegetable oil
  • 1/2 cup cranberry-orange relish

Instructions

  1. Heat oven to 425°F (220°C).
  2. Grease 12 medium muffin cups.
  3. Combine cornmeal, flour, sugar, baking powder, and salt in a bowl.
  4. Combine milk, egg, and vegetable oil in a separate bowl.
  5. Add the wet ingredients to the dry ingredients and mix just until moist.
  6. Fill the prepared muffin cups two-thirds full with batter.
  7. Place 1 1/2 teaspoons of cranberry-orange relish in the center of each muffin cup.
  8. Lightly press the relish into the batter with the tip of a spoon.
  9. Bake the muffins for 15 to 20 minutes until golden.
  10. Cool for 5 minutes in the muffin pan, then transfer to a wire rack to cool completely.
