Ingredients

  • 1 lb. cleaned crawfish tails
  • 4 slices bacon
  • 1 onion
  • 1/2 large bell pepper
  • 1 cup chopped green onions
  • 1/4 cup chopped parsley
  • 1 can golden corn soup
  • 2 cans cream-style corn
  • 1 (10 oz.) can Ro-Tel tomatoes
  • 1 cup whipping cream

Instructions

  1. Fry bacon until crispy, then remove and cool.
  2. In bacon drippings, sauté onion, bell pepper, green onions, and parsley. Transfer sautéed herbs to a large Dutch oven or pot.
  3. Sauté crawfish tails, then add half chopped and half whole crawfish to the onion mixture.
  4. Add canned golden corn soup, cream-style corn, and Ro-Tel tomatoes to the pot.
  5. Pour in whipping cream and stir well.
  6. Add milk or water until the soup reaches your desired thick consistency.
  7. Crumble the cooked bacon into the soup.
  8. Cook over medium heat until thoroughly heated, stirring occasionally.
  9. Serve hot, over rice or on its own.
