Ingredients

  • 1/2 box yellow rice
  • 1 lb crawfish tails
  • 1 stick margarine
  • 1 chopped bell pepper
  • 1 can cream of mushroom soup
  • 8 oz grated cheese
  • 1 can Ro-Tel tomatoes
  • 1 chopped onion

Instructions

  1. Saute chopped celery, bell pepper, and onion in margarine.
  2. Combine the cooked vegetables with canned Ro-Tel tomatoes and steam on low fire.
  3. Mix in cream of mushroom soup.
  4. Cook rice according to package directions.
  5. Mix cooked rice with the tomato-soup mixture.
  6. Add grated cheese and crawfish tails to the rice mixture.
  7. Pour into a baking dish and bake at 350°F for about 40 minutes or until bubbling.
  8. Do not stir during baking.
  9. Serve hot with salad and French bread.
