Ingredients

  • 1 C. Margarine or butter
  • 2 Onions, chopped
  • 1/2 C. Celery, chopped
  • 1/2 C. Green pepper, chopped
  • 1 Can RoTel tomatoes
  • 2 lbs. Crawfish, seasoned and found in blocks
  • Cayenne pepper
  • Tony Chachere Creole seasoning

Instructions

  1. Saute onions, celery, and green peppers in margarine or butter until tender.
  2. Add the RoTel tomatoes and seasoned crawfish to the sautéed vegetables.
  3. Season with cayenne pepper and Tony Chachere Creole seasoning to taste.
  4. Simmer the mixture until heated through and flavors meld.
  5. Serve over white rice.
