Ingredients

  • 1 lb. crawfish tails
  • 1 (7 oz.) pkg. tortellini with Parmesan cheese
  • 1 stick butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 c. Parmesan cheese, grated
  • 1 pt. whipping cream
  • 1/8 c. fresh parsley, chopped
  • 2 tsp. cornstarch with water

Instructions

  1. Saute onion and garlic in butter.
  2. Add crawfish (slightly rinsed) and continue cooking for approximately 5 minutes.
  3. Add Parmesan cheese, parsley, and whipping cream.
  4. Prepare tortellini as directed.
  5. Fold in tortellini with sauce and season with salt and red pepper.
  6. If sauce needs thickening, mix cornstarch with water and add to sauce.
