  • 1/2 tsp. oregano
  • 1/2 tsp. basil
  • 1/2 tsp. marjoram
  • 2 bay leaves
  • 1/4 tsp. pepper
  • 8 oz. noodles (wide)
  • 4 oz. cream cheese
  • 2 Tbsp. margarine

Instructions

  1. In a large pot or Dutch oven, combine water, bouillon cubes, and spices.
  2. Bring the mixture to a boil.
  3. Add mushrooms and boil for 5 minutes.
  4. Add noodles to the boiling stock and cook according to package directions plus 2 or 3 minutes.
  5. Drain the stock, retaining 1 cup of liquid.
  6. Return noodles to the pot and add cream cheese and margarine.
  7. Stir over low heat until the cheese is melted, adding enough reserved stock to keep everything damp to wet.
  8. Serve immediately.

Tips & Substitutions

For a richer flavor, consider sautéing the mushrooms in the margarine before adding them to the pot. If you don't have fresh mushrooms, canned mushrooms can work in a pinch, though they may alter the texture slightly. You can substitute the cream cheese with a similar amount of ricotta or mascarpone for a different creamy taste.

Serving Suggestions

Serve the Cream Cheese Noodles with a sprinkle of freshly grated Parmesan cheese and a side of garlic bread for a delightful meal. This dish pairs well with a light salad or steamed vegetables to balance the richness. For a heartier option, consider serving alongside Smoked Beef Dip for a satisfying combination.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, add a splash of water or broth to the noodles to prevent them from drying out, and warm them in a saucepan over low heat, stirring occasionally until heated through.

Frequently Asked Questions

Can I use different types of noodles?

Yes, you can use any type of noodles you prefer, such as egg noodles or even whole wheat varieties. Just be sure to adjust the cooking time according to the package directions to ensure they are cooked perfectly.

Is there a way to make this dish vegetarian?

Absolutely! You can replace the beef bouillon with vegetable bouillon for a vegetarian-friendly version. Additionally, use a plant-based cream cheese to maintain the creamy texture without any animal products.

Can I freeze the leftovers?

While you can freeze the noodles, the texture may change once thawed. If you plan to freeze, consider freezing the sauce separately from the noodles. When ready to eat, reheat the sauce and cook fresh noodles for the best results.
