Ingredients

  • 1 cup coffee cream
  • 1 packet cake yeast
  • 1 cup butter
  • 1 cup almonds or walnut mixture (for filling)
  • 5 egg yolks
  • 3 cups flour
  • 1/3 cup sugar

Instructions

  1. Scald the coffee cream and cool to lukewarm. Crumble the yeast into the cooled cream.
  2. Cream the butter until smooth. Add the egg yolks one at a time, beating well after each addition.
  3. Alternately add the flour and the yeast‑cream mixture to the creamed butter, beating thoroughly until a dough forms.
  4. Cover and chill the dough overnight in the refrigerator.
  5. Meanwhile, mix the sugar with the nutmeats and sprinkle half of this mixture onto a clean breadboard.
  6. Divide the chilled dough in half. Roll each portion out to about 1/8‑inch thickness on the sugar‑nutmeat mixture.
  7. Roll each sheet into a jelly‑roll shape, cut into 1/2‑inch slices, and place the slices on a baking sheet spaced 1½ inches apart.
  8. Allow the rolls to rise until light, about 1 hour.
  9. Bake at 350°F for about 25 minutes or until browned.
