- Scald the coffee cream and cool to lukewarm. Crumble the yeast into the cooled cream.
- Cream the butter until smooth. Add the egg yolks one at a time, beating well after each addition.
- Alternately add the flour and the yeast‑cream mixture to the creamed butter, beating thoroughly until a dough forms.
- Cover and chill the dough overnight in the refrigerator.
- Meanwhile, mix the sugar with the nutmeats and sprinkle half of this mixture onto a clean breadboard.
- Divide the chilled dough in half. Roll each portion out to about 1/8‑inch thickness on the sugar‑nutmeat mixture.
- Roll each sheet into a jelly‑roll shape, cut into 1/2‑inch slices, and place the slices on a baking sheet spaced 1½ inches apart.
- Allow the rolls to rise until light, about 1 hour.
- Bake at 350°F for about 25 minutes or until browned.
