Ingredients

  • 1/3 cup margarine or butter
  • 1 3/4 cups all-purpose flour
  • 3 tablespoons sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1/2 cup currants or raisins
  • 4 to 6 tablespoons half and half

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut margarine or butter into the flour, sugar, baking powder, and salt until the mixture resembles fine crumbs.
  3. Stir in the beaten egg, currants or raisins, orange rind (if using), and just enough half and half so the dough leaves the side of the bowl.
  4. Turn the dough onto a lightly floured surface and knead lightly ten times.
  5. Roll the dough to 1/2-inch thickness.
  6. Cut into rounds and place on a baking sheet.
  7. Bake in the preheated oven for about 15 minutes or until golden brown.
