Ingredients

  • 3 cups frozen peas
  • 1 cup sliced scallions
  • 1 1/2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1 cup whipping cream
  • 1/2 teaspoon finely shredded lemon peel
  • 3/4 cup shredded Swiss cheese
  • 1/4 teaspoon salt

Instructions

  1. In a large saucepan, cook the frozen peas according to the package directions.
  2. In another medium saucepan, cook the sliced scallions in butter until tender but not brown.
  3. Stir in the flour and 1/4 teaspoon salt, blending well.
  4. Add the whipping cream and finely shredded lemon peel, stirring constantly.
  5. Add the shredded Swiss cheese and cook until melted and smooth.
  6. Place the cooked peas in a serving bowl.
  7. Pour the cheese sauce over the peas and serve.
