Ingredients

  • 4 Tbsp. butter
  • 1 large onion, chopped
  • 2 lb. fresh spinach
  • 2 Tbsp. flour
  • 1 c. milk
  • 1/2 tsp. nutmeg
  • 1/4 tsp. allspice
  • 1 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Melt 4 tablespoons of butter in a large saucepan.
  2. Saute the chopped onion in butter until browned.
  3. Add washed and drained spinach to the onion and cook, covered, for 3 to 5 minutes.
  4. Drain the spinach and chop it.
  5. Return the chopped spinach to the saucepan.
  6. While the spinach is cooking, work the remaining butter and flour together with a fork.
  7. When the spinach is cooked, lower the heat and add the butter-flour mixture a little at a time, stirring until smoothly incorporated.
  8. Add milk and seasonings: nutmeg, allspice, salt, and pepper.
  9. Reheat gently until hot.
  10. Use as a garnish with other vegetables or main dishes.
