Ingredients

  • 4 cups water
  • 3 to 4 chicken pieces
  • 1 cup diced onions
  • 1/4 cup chopped celery
  • 1/4 cup minced parsley or 1 tablespoon dried parsley flakes
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 medium potatoes, diced
  • 4 to 5 green onions, chopped
  • 3 chicken bouillon cubes
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon poultry seasoning
  • 4 cups milk
  • 2 cups medium shell macaroni, cooked and drained
  • 1/4 cup butter or margarine
  • 1/4 cup all-purpose flour

Instructions

  1. Simmer water, chicken pieces, diced onions, celery, minced parsley or dried parsley flakes, bay leaf, salt, and white pepper in a Dutch oven until chicken is tender. Remove bay leaf and discard.
  2. Remove chicken, let it cool, then skin and debone. Set aside.
  3. Add diced potatoes, chopped green onions, chicken bouillon cubes, seasoned salt, and poultry seasoning to the broth. Simmer for 15 minutes.
  4. Add milk, cooked and drained medium shell macaroni, and the prepared chicken to the broth. Return to a gentle simmer.
  5. In a separate pan, melt butter over medium heat. Add flour and stir constantly until the mixture begins to brown.
  6. Gradually add the flour mixture to the soup, stirring well to blend.
  7. Let the soup stand for 20 minutes to allow flavors to meld.
  8. Season to taste with additional salt, pepper, or herbs as desired.
  9. Garnish with ground nutmeg and chopped fresh parsley before serving.
