Ingredients

  • 3 lb. chicken or pieces, cut up
  • 1/2 tsp. paprika
  • 2 tsp. salt
  • 2 tsp. butter, melted
  • 1 medium onion, sliced
  • 1 medium green pepper, cut into strips
  • 1/2 c. chopped celery
  • 16 oz. can tomatoes
  • 1/2 tsp. thyme
  • 40 oz. can sliced mushrooms

Instructions

  1. Sprinkle the chicken with paprika and salt.
  2. Brown the chicken in melted butter in a skillet.
  3. Add sliced onion, green pepper, chopped celery, and canned tomatoes to the skillet.
  4. Simmer until the chicken is tender.
  5. Stir in sliced mushrooms and simmer for an additional 10 minutes.
  6. Serve hot with rice.
