Ingredients

  • 1 lb crappie fillets
  • 1 medium onion
  • 1/2 tsp minced garlic
  • 1/2 green pepper
  • 1 stalk celery
  • 3 Tbsp vegetable oil
  • 5 Tbsp plain flour
  • 2 Tbsp tomato paste
  • 1 cup chicken stock
  • 1 cup white wine
  • 1 tsp crushed red pepper
  • 1/2 tsp file
  • 1/2 tsp basil
  • 1/2 tsp thyme
  • 1 Tbsp salt

Instructions

  1. In a pot over medium heat, place vegetable oil and add flour, stirring until it makes a dark brown roux.
  2. Add chopped onion, green pepper, and celery to the roux and cook until vegetables are softened.
  3. Gradually add chicken stock and white wine while stirring gently, then simmer for about 10 minutes.
  4. Cut crappie fillets into chunks and place them in an oiled casserole dish.
  5. Sprinkle the fish with salt, crushed red pepper, file powder, basil, and thyme.
  6. Pour the contents of the pot into the casserole dish over the fish.
  7. Bake at 350°F (175°C) for 20 minutes.
  8. Serve the Creole crappie over rice.
