- In a pot over medium heat, place vegetable oil and add flour, stirring until it makes a dark brown roux.
- Add chopped onion, green pepper, and celery to the roux and cook until vegetables are softened.
- Gradually add chicken stock and white wine while stirring gently, then simmer for about 10 minutes.
- Cut crappie fillets into chunks and place them in an oiled casserole dish.
- Sprinkle the fish with salt, crushed red pepper, file powder, basil, and thyme.
- Pour the contents of the pot into the casserole dish over the fish.
- Bake at 350°F (175°C) for 20 minutes.
- Serve the Creole crappie over rice.
