Ingredients

  • 1/4 cup sesame seed
  • 2 cups all-purpose flour
  • 1/2 teaspoon ground red pepper
  • 1 1/2 cups grated Kefalotyri cheese
  • 3/4 cup butter, softened
  • 1/4 cup olive oil
  • 2 egg yolks, beaten

Instructions

  1. Combine sesame seed, all-purpose flour, salt, ground red pepper, and grated Kefalotyri cheese in a bowl.
  2. Work in softened butter and olive oil using your hands until well mixed.
  3. Mix until the dough holds together.
  4. Roll the dough out on a lightly floured surface to desired thickness.
  5. Cut into small diagonal shapes.
  6. Transfer the cut shapes to cookie sheets.
  7. Brush the crackers with beaten egg yolks.
  8. Bake at 350°F for about 12 minutes, or until golden brown.
