Ingredients

  • 1/2 cup boiling water
  • 1/2 cup yellow cornmeal
  • 1/2 cup flour
  • 2 teaspoons baking powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1/2 cup milk
  • 1/4 cup butter or margarine, melted

Instructions

  1. In a medium bowl, pour boiling water over cornmeal; let cool.
  2. In a separate medium bowl, combine flour, baking powder, chili powder, cumin, and salt.
  3. Mix egg, milk, and melted butter into the cooled cornmeal mixture.
  4. Stir the mixture into the dry ingredients until blended; the batter will be runny.
  5. Spray a heated griddle or skillet with non-stick cooking spray.
  6. Drop the batter by tablespoonfuls onto the hot surface.
  7. Cook over medium heat until the bottoms are crispy brown and the tops look dry; then turn and brown the other side.
