Ingredients

  • 3/4 cup cornmeal
  • 3/4 cup all-purpose flour
  • 1 teaspoon onion powder
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 2 1/2 tablespoons chopped fresh parsley
  • 1 egg white
  • 2/3 cup buttermilk
  • 1/2 teaspoon hot sauce
  • 4 large carrots, scraped and cut into thin strips
  • Vegetable oil

Instructions

  1. Combine cornmeal, all-purpose flour, onion powder, Old Bay seasoning, salt, white pepper, and chopped parsley; set aside.
  2. Beat egg white until foamy; stir in buttermilk and hot sauce.
  3. Dip carrot strips into the buttermilk mixture; drain off excess, then dredge in the seasoned cornmeal mixture.
  4. Pour vegetable oil to a 1-inch depth in a Dutch oven and heat to 350°F.
  5. Fry the coated carrots for 2 minutes or until lightly browned.
  6. Serve immediately.
