Ingredients

  • 1 lb. carrots, thinly sliced
  • 1/3 c. chopped onions
  • 1/3 c. chopped green peppers
  • 1/2 c. vinegar
  • 3 Tbsp. vegetable oil
  • 1/2 c. sugar
  • 1/4 tsp. prepared mustard
  • 1 tsp. Worcestershire sauce

Instructions

  1. Cook carrots in a small amount of boiling water about 5 minutes or until crisp-tender; drain.
  2. Combine cooked carrots, chopped onions, and chopped green peppers; set aside.
  3. Combine vinegar, vegetable oil, sugar, prepared mustard, and Worcestershire sauce in a jar.
  4. Cover tightly and shake vigorously until well mixed.
  5. Pour the marinade over the vegetables; toss lightly with a fork.
  6. Refrigerate overnight before serving.
