Ingredients

  • 1 lb. lean ground beef
  • 1/2 c. chopped onion
  • 1 clove garlic, minced
  • 1 tsp. salt
  • 1/2 tsp. chili powder
  • 2 c. shredded Monterey Jack cheese
  • 1 c. diced tomatoes
  • 4 large wheat flour tortillas
  • oil (for frying)

Instructions

  1. Brown ground beef, chopped onion, and minced garlic in a heavy frying pan.
  2. Add salt and chili powder, and blend well.
  3. Place 1/2 cup of the beef filling, 1/2 cup cheese, and 1/2 cup diced tomatoes onto one-half of each tortilla.
  4. Fold the other half over the filling, pressing it down to remove any air pockets.
  5. Pour oil into a large skillet to a 1/4-inch depth and heat until hot.
  6. Place the filled tortillas into the hot oil a few at a time.
  7. Saute over medium to high heat until golden on each side, about 45 seconds per side.
  8. Remove from the pan onto paper towels to drain.
  9. Cut into wedges and serve.
