Crock Pot Posole
Ingredients
- 1 - 1 1/2 lb country-style pork ribs, boneless ⓘ
- 1 medium onion, chopped ⓘ
- 1 (29 ounce) can white hominy, drained (Posole) ⓘ
- 1 (14 1/2 ounce) can diced tomatoes ⓘ
- 2 -3 cups chicken stock ⓘ
- 2 garlic cloves, minced ⓘ
- 1 (4 ounce) can chopped green chili peppers ⓘ
- 1 teaspoon salt ⓘ
- 1/2 teaspoon thyme ⓘ
- 1/4 teaspoon cumin ⓘ
Instructions
- Cube ribs and brown pork in lightly oiled skillet. Add onion and saute until limp. Drain fat.
- Combine pork, onion and remaining ingredients in crock pot.
- Cook on low heat for 5 hours to 6 hours.
