Layered in the slow cooker, this flavorful tortilla stack combines seasoned ground beef, cheese, fresh tomatoes, and crispy tortillas for a satisfying meal perfect for family dinners.

Ingredients

  • 1 1/2 lb lean ground beef
  • 8 corn tortillas
  • 1 can Cheddar cheese soup
  • 1 package taco seasoning mix
  • 3 medium tomatoes
  • 1/4 cup dairy sour cream
  • 2 cups shredded lettuce
  • 1/4 cup chopped green onion
  • 1 red bell pepper
  • 1 avocado

Instructions

  1. Crumble 1/4 of the ground beef into the bottom of the slow cooker.
  2. Top with 1/4 of the tortilla wedges.
  3. In a small bowl, combine the cheese soup and taco seasoning mix.
  4. Spread 1/4 of the soup mixture over the tortillas in the slow cooker.
  5. Sprinkle with 1/4 of the chopped tomatoes.
  6. Repeat the layering process until all ingredients are used, ending with the soup mixture and tomatoes on top.
  7. Cover and cook on low for 4 to 5 hours.
  8. Serve hot, garnished with sour cream, shredded lettuce, chopped green onion, chopped red bell pepper, and chopped avocado as desired.
