Ingredients

  • 2 Tbsp. butter
  • 1/4 cup chopped onion
  • 2 Tbsp. flour
  • 1/2 tsp. dry mustard
  • 2 eggs
  • cayenne
  • 1/2 tsp. salt
  • 3/4 cup water
  • 1 cup ground meat (chicken, beef, or ham)

Instructions

  1. Sauté chopped onion in melted butter until browned.
  2. Mix in dry ingredients: flour, dry mustard, salt, and cayenne.
  3. Add water and stir until mixture becomes thick.
  4. Add ground meat and cook for 2 minutes.
  5. Break in eggs and stir until well combined.
  6. Chill the mixture.
  7. To mold, dip shaped croquettes in seasoned beaten eggs, then in cracker meal, and chill again.
  8. Roll croquettes in melted butter.
  9. Bake on a baking sheet at 350°F for 30 minutes.
  10. Serve with tomato or mushroom sauce.
