Ingredients

  • 1 gal. potatoes
  • 10 hard-cooked eggs
  • 1 c. chopped onion
  • 2 c. mayonnaise
  • 1 c. light cream
  • 1/3 c. vinegar
  • 1/3 c. sugar
  • 3 Tbsp. mustard
  • 1/2 tsp. salt

Instructions

  1. Place cooked, peeled, and sliced potatoes in a large salad bowl.
  2. Separate the eggs into whites and yolks.
  3. Chop the egg whites and add them to the potatoes along with the chopped onion.
  4. Gently toss the potatoes, whites, and onion together.
  5. In a separate bowl, mash the egg yolks with mayonnaise, light cream, vinegar, sugar, mustard, and salt to make the dressing.
  6. Pour the dressing over the potato mixture and stir to coat evenly.
  7. Cover the salad and chill before serving.
