Ingredients

  • 6 Tbsp. butter
  • 4 large Irish potatoes
  • 3/4 c. crushed corn flakes
  • 1 c. sharp cheese, shredded
  • 1 tsp. salt
  • 1 tsp. paprika

Instructions

  1. Peel and cut potatoes into 1/2-inch crosswise slices.
  2. Cook in boiling water until almost tender.
  3. Melt butter in a shallow 9 x 13-inch pan.
  4. Add a single layer of potatoes, turning once in the butter.
  5. Mix crushed corn flakes, shredded cheese, salt, and paprika. Sprinkle over the potatoes.
  6. Bake for 30 minutes or until tops are crisp and potatoes are done.
  7. Serve hot.
