Ingredients

  • 2 large onions, sliced thin
  • 1/2 cup butter or margarine
  • 1 (8 oz) container sour cream
  • 1/2 teaspoon dried dill weed
  • 1/4 teaspoon salt
  • 8 oz (1 cup) grated Cheddar cheese
  • 1 (15 oz) can creamed corn
  • 1/3 cup milk
  • 1 (15 oz) package corn muffin mix
  • 4 drops hot red pepper sauce

Instructions

  1. Saute the sliced onions in butter until tender and golden.
  2. Stir in sour cream, dried dill weed, salt, and half of the grated Cheddar cheese.
  3. In a separate bowl, combine creamed corn, milk, corn muffin mix, egg, and hot red pepper sauce to form the batter.
  4. Pour the corn mixture into a buttered 9 x 13-inch dish.
  5. Spread the onion mixture evenly over the top of the corn batter.
  6. Sprinkle the remaining grated Cheddar cheese over the onion layer.
  7. Bake in a preheated 425°F oven for 30 to 40 minutes until golden and cooked through.
