Ingredients

  • 12 large cucumbers
  • 6 medium onions
  • 1/4 cup salt
  • 1 quart vinegar
  • 2 cups brown sugar
  • 1 tablespoon dry mustard
  • 1 tablespoon turmeric
  • 1 tablespoon cornstarch

Instructions

  1. Wash, peel, and slice cucumbers and onions.
  2. Cover them with salt and let stand overnight.
  3. Bring vinegar and salt to a boil.
  4. Sift together mustard, turmeric, and cornstarch.
  5. Mix the sifted powders with a little cold vinegar and add to the boiling vinegar and sugar.
  6. Drain cucumbers and onions from salt water.
  7. Put the drained vegetables into the vinegar solution and bring to a boil.
  8. Pack in sterilized jars and seal at once.
