Ingredients

  • 1 pkg. lemon Jello
  • 3/4 c. hot water
  • 3/4 c. cucumber, coarsely grated, unpeeled
  • 2 tsp. grated onion
  • 1 c. cottage cheese
  • 1/3 cup slivered almonds
  • 1 c. mayonnaise

Instructions

  1. Dissolve the lemon Jello in hot water.
  2. Cool the mixture at room temperature.
  3. Mix grated cucumber, grated onion, cottage cheese, slivered almonds, and mayonnaise together.
  4. Pour the vegetable mixture into the cooled Jello.
  5. Pour the combined mixture into a salad mold.
  6. Chill until the Jello is firm and the salad is set.
