Cucumbers In Turmeric

Crisp, refreshing cucumber pickles infused with turmeric, garlic, and ginger, perfect as a side for lamb dishes and curries, offering vibrant flavors and a cool crunch.

Ingredients

  • 5 slicing-type cucumbers
  • 3 Tbsp. pickling salt
  • 1 small onion, finely minced
  • 3 cloves garlic, minced
  • 1 Tbsp. fresh ginger root, minced or 1 tsp. dried ground ginger
  • 2 Tbsp. peanut oil
  • 1 1/2 tsp. turmeric
  • 1 Tbsp. white sugar
  • 1/2 c. cider vinegar
  • 1/4 c. water

Instructions

  1. Peel the cucumbers.
  2. Cut the cucumbers into quarters lengthwise.
  3. Scrape away the seeds and cut into bite-sized pieces.
  4. Mix the cucumbers with 2 tablespoons of pickling salt.
  5. Refrigerate for an hour.
  6. Wash the cucumbers in fresh water three times and drain well.
  7. Press in a clean dish towel to remove as much moisture as possible.
  8. Saute the onion, garlic, and ginger root in peanut oil until the onion is soft.
  9. Add the turmeric, remaining tablespoon of salt, and sugar.
  10. Stir well.
  11. Add the vinegar and water.
  12. Simmer for 10 minutes.
  13. Pour the mixture over the cucumbers in a glass or crockery bowl.
  14. Refrigerate for at least one hour.
  15. Stir a few times.
  16. Serve and enjoy with lamb dishes and curries.
