Ingredients

  • 2 cans beef consomme
  • 1 tsp ground cumin
  • 1 Tbsp butter or margarine
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1/4 to 1/2 cup chopped green pepper (optional)
  • 1 cup long-grained raw white rice
  • 2 Tbsp Worcestershire sauce
  • 1/2 tsp salt

Instructions

  1. Bring the beef consomme to a boil and add the ground cumin.
  2. In a skillet, sauté chopped onion, celery, and green pepper (if using) in butter until soft.
  3. Add the rice and sauté until golden brown.
  4. Transfer the rice and vegetables into a large casserole dish.
  5. Pour the boiling consomme over the rice mixture.
  6. Cover the casserole and bake at 350°F for 25 minutes.
  7. Stir the rice and check for doneness before serving.
