Curried Haddock Chowder

Ingredients

  • 1 Tbsp olive oil
  • 1 onion, chopped
  • 2 slices bacon, finely chopped
  • 1 green pepper, diced
  • 1 1/2 Tbsp curry powder
  • 2 c chicken stock
  • 1 1/2 c milk
  • 1/2 lb haddock, cubed
  • 12 oz can sweet corn
  • 2 medium potatoes, diced
  • salt and pepper
  • chopped chives (to garnish)

Instructions

  1. Heat olive oil in a large pot and cook chopped onion and finely chopped bacon for 2 to 3 minutes.
  2. Add diced green pepper and curry powder, then cook for a further minute.
  3. Pour in chicken stock and milk, then add cubed haddock, sweet corn, and diced potatoes.
  4. Season with salt and pepper to taste.
  5. Cover the pot and simmer for 20 minutes until the potatoes are tender and flavors meld.
