Ingredients

  • 6 frozen lobster tails (4-oz each)
  • 2 Tbsp. finely chopped onion
  • 3 Tbsp. butter or margarine
  • 3 Tbsp. all purpose flour
  • 3/4 tsp. salt
  • 1/2 tsp. curry powder
  • 1/4 tsp. paprika
  • 2 c. milk
  • Hot cooked Rice

Instructions

  1. Partially thaw lobster tails.
  2. Using a knife, butterfly the tails by cutting down the center of the back and opening them wide, without cutting under the membrane. Place on a broiler pan with the shell side down.
  3. Dash a few drops of bottled hot pepper sauce into the melted butter, then brush it over the lobster meat.
  4. Broil the lobster 4 inches from the heat until the meat loses its translucency and can be flaked with a fork, about 17 minutes for a 6 to 8-ounce tail.
  5. Loosen the meat and serve with butter and lemon.
