Ingredients

  • 6 to 8 pork chops
  • 20 oz. unsweetened pineapple chunks
  • 2 tsp. curry powder
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Instructions

  1. Brown pork chops on both sides and layer in an oblong casserole dish. Drain pineapple, reserving the liquid.
  2. Top the chops with pineapple chunks. Sprinkle curry powder, salt, and pepper over the chops and pineapple. Pour 1/4 cup of the reserved pineapple liquid over the chops.
  3. Cover the casserole dish with foil and bake at 350°F for 1 hour.
