Ingredients

  • 1 medium onion, chopped
  • 3/4 cup chopped green bell pepper
  • 6 to 8 eggs
  • 1 tablespoon milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups shredded Cheddar cheese
  • 1/2 pound sliced bacon, cooked and crumbled
  • 4 (10-inch) flour tortillas, warmed
  • salsa (optional)

Instructions

  1. In a nonstick skillet, sauté onion and green pepper in butter until tender.
  2. In a bowl, beat the eggs, milk, salt, and pepper.
  3. Pour the egg mixture over the vegetables in the skillet.
  4. Sprinkle with shredded Cheddar cheese and crumbled bacon.
  5. Cover the skillet and cook gently over medium heat until the eggs are completely set.
  6. Spoon 1/2 cup of the egg mixture into the center of each warmed flour tortilla.
  7. Fold the sides over the filling.
  8. Serve with salsa, if desired.
