Ingredients

  • 1/3 cup mayonnaise

  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon coriander
  • 2 drops red hot sauce
  • 3 cups hot, cooked rice
  • 1/2 red bell pepper, chopped
  • 1/2 cup sliced green onion
  • 1/2 cup raisins
  • 1/4 cup shredded coconut

Instructions

  1. Soak raisins in boiling water for 20 minutes.
  2. Saute almonds in margarine until crisp; drain and reserve.
  3. Combine mayonnaise, garlic, curry powder, lemon juice, cumin powder, salt, pepper, coriander, and red hot sauce to make the dressing.
  4. Stir hot cooked rice into the dressing.
  5. Fold in chopped red bell pepper, sliced green onions, soaked raisins, and shredded coconut.
  6. Chill the mixture.
  7. Just before serving, fold in the toasted almonds.
