Curried Shrimp Casserole

Ingredients

  • 2 medium onions
  • 1.5 lb. shelled, deveined shrimp
  • 2 Tbsp. butter
  • 16 oz. can tomatoes
  • 2 c. cooked rice
  • 2 tsp. curry powder
  • 1 tsp. Worcestershire sauce
  • salt and pepper to taste
  • 4 strips bacon
  • 1/2 c. chopped celery (optional)

Instructions

  1. Saute onions and shrimp in butter gently until shrimp are pink.
  2. Add tomatoes, cooked rice, celery (if using), curry powder, Worcestershire sauce, salt, and pepper. Mix well.
  3. Pour the mixture into a greased casserole dish.
  4. Top with bacon strips.
  5. Bake at 350°F until bacon is done, about 5 to 10 minutes.
