Ingredients

  • 4 whole chicken breasts (about 4 lb.), skinned, halved lengthwise and boned
  • 1/3 cup flour
  • 4 slices bacon
  • 1/4 cup honey
  • 2 tablespoons prepared mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon curry powder

Instructions

  1. Rinse chicken breasts and pat dry.
  2. Coat chicken with flour.
  3. In a large skillet, cook bacon slices until crisp.
  4. Drain bacon on paper towels, reserving drippings in the skillet.
  5. Crumble bacon and set aside.
  6. In the same skillet, brown chicken on both sides about 10 minutes.
  7. Place chicken in an 8 x 8 x 2-inch baking dish.
  8. Bake, uncovered, in a 350°F oven for 30 minutes.
  9. Meanwhile, combine honey, mustard, salt, and curry powder.
  10. Drizzle honey mixture over the chicken.
  11. Bake, uncovered, for an additional 15 minutes.
  12. Top the chicken with crumbled bacon before serving.
