Curry Lamb

Ingredients

  • 1 1/2 lb. boneless lamb shoulder
  • 5 Tbsp. salad oil
  • 1 large onion, sliced
  • 1 clove garlic
  • 2 tsp. curry powder
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. chopped celery
  • 1 tart apple, peeled and chopped
  • boiling water

Instructions

  1. Cut the lamb into 1-inch pieces.
  2. Heat salad oil in a large skillet.
  3. Add sliced onion and garlic to the skillet.
  4. Cook until the onion is lightly brown, then remove and discard the garlic.
  5. Add curry powder, salt, and pepper to the skillet.
  6. Cook for 5 minutes to toast the spices.
  7. Add the lamb, chopped celery, peeled and chopped tart apple, and enough boiling water to cover the ingredients.
  8. Mix well and bring to a simmer.
  9. Cover and simmer for 30 minutes or until the lamb is tender.
  10. Serve the curry hot with rice.
