- Cut the lamb into 1-inch pieces.
- Heat salad oil in a large skillet.
- Add sliced onion and garlic to the skillet.
- Cook until the onion is lightly brown, then remove and discard the garlic.
- Add curry powder, salt, and pepper to the skillet.
- Cook for 5 minutes to toast the spices.
- Add the lamb, chopped celery, peeled and chopped tart apple, and enough boiling water to cover the ingredients.
- Mix well and bring to a simmer.
- Cover and simmer for 30 minutes or until the lamb is tender.
- Serve the curry hot with rice.
