  • 2 bouillon cubes
  • 2 c. boiling water

  • 1/2 tsp. salt
  • 1/2 c. chopped apples
  • 1 c. diced celery

  4. Add bouillon cubes dissolved in boiling water, catsup, salt, chopped apples, and diced celery.

Tips & Substitutions

For a richer flavor, consider marinating the lamb shoulder in the curry powder and some yogurt for a few hours before cooking. If you don't have bouillon cubes, use homemade stock instead. You can also substitute the apples with pears for a different sweetness. Adjust the curry powder to your taste for more or less heat. This dish is inspired by Indian recipes, so feel free to add some chili peppers for spice.

Serving Suggestions

Serve the curry hot over fluffy rice to soak up the delicious sauce. It pairs well with naan bread or a side of roasted vegetables for a complete meal. For an extra touch, consider serving it with a side of Gooseberry Chutney for a sweet and tangy contrast. This dish also makes a great filling for wraps or pita bread.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the curry in a saucepan over low heat, stirring occasionally until warmed through. You can also microwave it in short intervals, stirring in between to ensure even heating. If the sauce thickens, add a splash of water to loosen it up.

Frequently Asked Questions

Can I use a different cut of lamb for this recipe?

Yes, you can use lamb neck or leg for a leaner option. Just adjust the cooking time as these cuts may require less time to become tender. Make sure to brown the meat well to enhance the flavor, as with lamb shoulder.

What can I serve with this curry?

Fluffy rice is a classic choice, but it also pairs nicely with quinoa or couscous. For a complete meal, consider serving a side salad or roasted vegetables. You might also enjoy it with a cooling cucumber raita to balance the spiciness of the curry.

Can I make this dish ahead of time?

Absolutely! This curry tastes even better the next day as the flavors meld. You can prepare it a day in advance, let it cool, and store it in the refrigerator. Just reheat gently before serving, and it will be ready to enjoy.
