Ingredients

  • 2 1/2 lb. pickling cucumbers, thinly sliced
  • 1 medium onion, thinly sliced
  • 1 Tbsp. salt
  • 1 green pepper, cut into thin strips
  • 2 c. vinegar
  • 1 1/3 c. sugar
  • 1 Tbsp. curry powder
  • 2 tsp. pickling spice
  • 1 tsp. celery seed
  • 1 tsp. mustard seed

Instructions

  1. In a large mixing bowl, combine cucumbers and onion.
  2. Sprinkle with salt.
  3. Cover with ice water and let stand for 3 hours.
  4. Drain well.
  5. Rinse and drain again.
  6. Combine all ingredients.
  7. Heat just to boiling.
  8. Fill pint jars, leaving 1/2-inch headspace.
  9. Refrigerate when cooled.
