Ingredients

  • 2 Tbsp. butter
  • 1 1/3 c. cornmeal
  • 1/3 c. all-purpose flour
  • 1/4 c. sugar
  • 1 1/2 tsp. salt
  • 1 tsp. baking powder
  • 2 eggs
  • 2 c. milk, divided
  • 1 c. buttermilk

Instructions

  1. Preheat oven to 400°F.
  2. Place butter in a 9-inch skillet and heat in the oven until melted.
  3. In a large bowl, combine cornmeal, flour, sugar, salt, and baking powder.
  4. Add eggs, one cup of milk, and buttermilk to the dry ingredients and mix until smooth.
  5. Pour the batter into the hot skillet with melted butter.
  6. Very slowly pour the remaining cup of milk over the top of the batter without stirring.
  7. Bake for 50 to 55 minutes until golden and cooked through.
