Ingredients

  • 2 eggs
  • 3 Tbsp. butter flavored Crisco
  • 3 Tbsp. sugar
  • 1/2 tsp. salt
  • 2 c. milk
  • 1 1/2 Tbsp. white vinegar
  • 1 c. all-purpose flour
  • 3/4 c. yellow corn meal
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 c. heavy cream

Instructions

  1. Preheat oven to 350°F.
  2. Grease an 8-inch square pan with butter flavored Crisco.
  3. Place the greased pan in the oven to heat while preparing the batter.
  4. Melt Crisco and mix with eggs until well blended.
  5. Add sugar, salt, milk, and vinegar; beat well.
  6. Mix in flour, cornmeal, baking powder, and baking soda; stir just until smooth and no lumps remain.
  7. Pour the batter into the heated dish.
  8. Pour the heavy cream into the center of the batter without stirring.
  9. Bake for 1 hour or until lightly brown.
