Ingredients

  • 1 duck, cut up
  • salt
  • 1 onion
  • 1/2 cup vinegar
  • 1 quart tomato juice
  • 1 tablespoon marjoram
  • water
  • 1 quart milk
  • 2 eggs
  • 12 tablespoons flour
  • blood from duck, mixed with some vinegar

Instructions

  1. Put duck, salt, onion, vinegar, and tomato juice in a large pot.
  2. Add enough water to make about 2 gallons.
  3. Bring to a boil and cook until the duck is tender.
  4. Remove the duck and onion from the broth.
  5. Prepare a thickening mixture by combining milk, eggs, and flour.
  6. Stir the mixture into the broth and cook until the soup thickens.
  7. Add the duck blood mixture to the soup and heat through, avoiding boiling.
